Gram flour(Besan/Kadalapodi) 1 Cup
Sugar 1 Tsp
Oil 1 Tsp
Ginger paste 1 Tsp
Green chilli paste 1 Tsp
Salt As reqd
Lemon juice 1 Tsp
Water 180 Ml
Turmeric powder 1/2 Tsp
Fruit Salt 1 Tsp

For seasoning:

Oil 1 Tsp
Mustard seeds 1 Tsp
Asafoetida(Kayam) and Fenugreek seeds(Uluva) 1/4 Tsp

Preparation Method

1) Mix all ingredients except fruit salt and make a smooth batter.

2) Keep aside for 10 mins.

3) Take a pan of boiling water ready to steam the dhoklas.

4) Grease a plate with oil.

5) Add the fruit salt to the batter and mix well. It will become frothy.

6) Pour into the prepared plate and steam in a closed pan for 10 mins. Do not add whistle.

7) Leave it to cool for 5 mins.

8) Cut into pieces and invert plate onto bigger plate.

9) Heat oil in a pan or a kadai.

10) Add the ingredients for seasoning and pour this over the prepared dhoklas.

11) Garnish with fresh coriander and coconut.   Baking soda can be substituted instead of fruit salt.
